Many of us find it a struggle to put together a main course every night of the week, never mind thinking about (or bothering with the hassle of) dessert. But sometimes all it takes is a little inspiration. For a delicious (and easy) sweet weeknight treat, try this panna cotta with caramel sauce from the chefs at Urbano, the Italian trattoria in Dubai’s Souk Al Bahar.
Ingredients
Serves 5
1000ml heavy whipping cream
100g caster sugar
1 tsp vanilla essence
4g gelatin, soaked in cold water for two to three minutes, then drained
Caramel sauce (buy it ready-made from any hypermarket)
Mint leaves, for garnish
Method:
In a heavy pot, add the whipping cream, sugar and vanilla essence. Stir constantly over low heat
until it reaches 95C and has a slightly thick consistency. Then add the gelatin and mix well.
Remove from the heat and let cool before dividing the panna cotta equally among five glass
serving dishes. Keep chilled until ready to serve.
Before serving, pour a thin layer of caramel sauce on top of the panna cotta. Garnish with mint
leaves.
