Middle Eastern cuisine
• Manal Al Alem, known as the Queen of the Arabian Kitchen, has published several cookbooks, including Manal Al Alem's Kitchen. Al Alem also hosts her own cookery shows on television. She'll be preparing a variety of Middle Eastern dishes from her latest cookbook.

Wafaa Al Kandari, from Kuwait, is a mother of six. An assistant chemistry engineer whose heart is in food, you’ll find her whipping up Kuwaiti cuisine.

Noura Al Ameri teaches culinary arts at Mohammed bin Khalid Al Nahyan Future Generation Society. She focuses on Emirati cuisine and also teaches classes on feasts for Ramadan and unique desserts for Eid.

Mohamed Orfali, from Syria, is an expert on Aleppo cuisine and modern Arab dishes. His first cookbook, Ana Halabi, focused on the history of Aleppo foods. He’ll be sharing his knowledge of Syrian cuisine.

Khaldoun Ghrayzi is Lebanese and specialises in Arabic cuisine and food from his homeland. A chef at Lancaster Hotel Beirut, he’ll showcase Lebanese dishes.

Nordic and Polish cuisine
K C Wallberg is a star chef in Sweden. He’s been at the helm of the acclaimed restaurant Gubbhyllan in Skansen, the world’s first open-air museum, in Stockholm. He’ll be demonstrating fine Swedish dishes.

Pawel Wiktorek is Polish and specialises in nutritious food. He cooked in Poland and the United Kingdom before coming to the UAE in 2013. He is now a sous chef at Zuma Dubai, one of only two restaurants in Dubai to make last year’s World’s Best Restaurants list.

Indian and Malaysian cuisine
Chef Ritu Chaturvedi is an expert on Indian vegetarian dishes. A blogger who developed a love of food by watching her mum in the kitchen, she will share her secrets to healthy Indian dishes.

Chef Vandana Jain lives in Dubai and specialises in healthy Indian cuisine. Her first cookbook, Vandana’s Veggie Creations, was published in 2012. She regularly teaches cookery classes in the city. She’ll present healthy, vegetarian North Indian dishes.

Chef Wan (real name Redzuwan bin Ismail), a celebrity chef in Malaysia, is the culinary ambassador for his country. He’ll share his love of Malaysian cuisine.
